2lb’s chicken thighs, bone-in/skinless
1T Salt
1 8 oz. plain yogurt
Juice of half a lemon
2T light olive oil
1 med. onion chopped finely
1 tsp clove garlic minced
1 tsp fresh ginger minced
1 med. tomato blanched & chopped
Spices
½ tsp ground cayenne
½ tsp turmeric
2 tsp coriander
1 tsp cumin
½ tsp black pepper
½ tsp cardamom
pinch of cinnamon & cloves
Mix together chicken, salt, yogurt, and lemon. Let sit for at least ½ hour before cooking. Sauté onion till golden brown. Add garlic and ginger and sauté for 3 more minutes.
Combine spices and stir into above mixture. Add tomato and sauté for 2 minutes. Add chicken mixture and simmer until chicken is tender (about 40 minutes). Thicken with cornstarch and water if desired.
Optional:
Add steamed cauliflower florets and spinach leaves at the end.
